Simply Delicious Biblical Barley Cakes

These cakes are on the sweet side and go well with any meal or celebration. Barley is also one of the 7 foods of the Promised Land and remind us of God’s promises, provisions and grace.
These serve well for breakfast, lunch or dinner along with a topping of Fig Peach Jam! Now your cooking!
- 1 1/2 cups barley flour (freshly milled)
- 1/2 cup whole wheat flour – hard white or spelt (freshly milled)
- 1/4 teaspoon salt – Real Salt
- 1 cup milk – your favorite variety
- 1 egg – from your favorite farmer if possible
- 1 cup honey – local is best (less is ok, since this is a sweet bread)
Preheat oven to 425 degrees.
Lightly spray or oil baking tray or shaped muffin tins.
Mix freshly milled flours and salt.
Add in milk and egg till thoroughly mixed
Add honey to mix and stir.
Drop by spoonful’s onto prepared baking tray or into muffin tins.
If using a baking tray leave space for cakes to spread.
Bake 10-15 minutes. Cakes will be light brown when done.
This cake is flexible and other optional ingredients would be tasty such as added cinnamon, raisins, or mini chocolate chips.
Freshly milling the flour makes these taste very fresh and better than any bread from the grocery store. Having your own mill such as the Nutrimill or the Mock Mill makes cooking less expensive and full of nutrition.
Barley grains can be purchased at specialty stores and even pearled barley can be milled in the Mock mill for this recipe. Be creative when using barley – it is highly nutritious with a healthy supply of fiber and flavor.
