Preheat your oven at 350°F (180°C).
In a bowl, combine all liquid ingredients - oil, eggs, vanilla, and sucanat.
In another bowl, combine the dry ingredients - flour, baking powder, baking soda, salt, and cinnamon.
Combine the dry ingredients with the liquid ones and mix well. Add in the zucchini.
Pour the mixture into a baking dish. Top with chopped nuts, cinnamon, and sucanat.
If you are baking bread, bake for an hour. But if you are baking muffins, bake for about 15 minutes.
