Zucchini Bread or Muffins

How to Make the Perfect Zucchini Bread or Muffins

Ingredients
  

  • 3 cups whole wheat soft flour substitute: spelt, kamut or mix with barley and millet
  • 3 cups (720 ml) finely chopped zucchini
  • 2 teaspoon cinnamon
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 cup (470 ml) sucanat
  • 3 eggs beaten
  • 1/2 cup (120 ml) oil or pumpkin puree, applesauce
  • 1 teaspoon vanilla
  • 1 teaspoon salt

Instructions
 

  • Preheat your oven at 350°F (180°C).
  • In a bowl, combine all liquid ingredients - oil, eggs, vanilla, and sucanat.
  • In another bowl, combine the dry ingredients - flour, baking powder, baking soda, salt, and cinnamon.
  • Combine the dry ingredients with the liquid ones and mix well. Add in the zucchini.
  • Pour the mixture into a baking dish. Top with chopped nuts, cinnamon, and sucanat.
  • If you are baking bread, bake for an hour. But if you are baking muffins, bake for about 15 minutes.
