Gluten Free Oat Flour Muffins Recipe - Quick, Easy, Healthy!

Ingredients
  

  • 1 tablespoon baking powder
  • 2 cups (470 ml) oat flour
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 2 eggs
  • 1 cup (240 ml) raisins
  • 1/3 cup (75 ml) honey
  • 1 teaspoon vanilla
  • 2/3 cup (150 ml) buttermilk

Instructions
 

  • Preheat the oven at 375°F or 190°C.
  • Stir your dry ingredients together. Be sure to press out lumps to make the mixture soft and even.
  • Add in the liquids and the raisins.
  • Stir the mixture lightly and let it sit for a few minutes before stirring again.
  • Pour batter into your lightly greased non-stick muffin tins.
  • Bake your oat flour muffins for 15 to 20 minutes.
