Preheat oven: 350°F (180°C).
Combine boiling water, raisins and baking soda. Let stand until cool.
Cream butter, sucanat, molasses, eggs, and vanilla.
Add flour, salt, cinnamon, and nutmeg.
Drain water from raisin mixture, reserving liquid. Add water to flour mixture.
Gently stir in raisins and nuts.
Bake in 2 greased loaf pans for 1 hour.
