When the fall season starts, you know what that means - it’s the apple season!
Well, some apple varieties are available even during the late summer but by late September to November, you’ll see apples in your yard have already ripened. And it’s time to harvest them and enjoy them in different ways!
This apple cranberry coffee cake recipe is one of my favorite desserts during fall because it's packed with nutrition! As you know, I always have three special ingredients or requirements in every recipe that I share with you. One, it needs to have protein. Two, it has to be rich in fiber. And three - it MUST taste great!
In all the recipes I teach my classes, as well as the ones included in the Healthy Treasures Cookbook, I make it a point that they have these important ingredients all in place. And of course, this apple cranberry harvest coffee cake is not an exception!

Nutritional Benefits of the Harvest Apple Cranberry Coffee Cake
Perhaps you have eaten apple cake in the past and you’re thinking this one’s just like it. But no. This harvest coffee cake with cranberries levels up in terms of nutritional value and flavor.
For instance, I use a protein-rich flour for this recipe, which I actually mill myself. This recipe calls for pastry flour, and you have a choice to make it gluten-free or regular, so it is all up to you. Sometimes I add protein powder to my recipes but since this one already uses flour that is packed with protein, you are free to use protein powder or not. (But it sure would not hurt to sprinkle some, especially if you want to increase your protein intake!)
Speaking of flour...
In my kitchen, I always have my ever-reliable mini mill that I use to make homemade flour in seconds. You can make almond flour, coconut flour, quinoa flour… You name it, you got it!
And aside from the flour, we have our nuts, which as you all know are packed with healthy fats and protein. If you have a food processor or a slicer shredder, you can cut up some nuts into smaller pieces that you will sprinkle into the pan and then it is good to go.
Next up, we have our antioxidants. The apples you use in this recipe are packed with antioxidants that can help your health thrive. Then, there are cranberries that are not just antioxidant-rich but also loaded with fiber.
Then, we have butter and eggs, which are actually biblical foods as these are mentioned in the Bible. You can read more about these Bible foods and the Bible diet from the Treasures of Health Nutrition Manual.
The sweetener I use for this apple coffee recipe is Sucanat, although you could also substitute with Stevia or monk fruit. If you prefer honey, feel free to do so as it is completely fine, too.
I would like to point out that you will be creaming the butter, sweetener, and applesauce in this recipe. What I use for this process is my Nutrimill Artiste mixer, which is an excellent time-saver and workhorse in the kitchen. It just makes things fast and easy, so I don’t have to do manual mixing. And yes, the result is always perfectly smooth, thick, and just how I want it.
So that’s pretty much what this apple cranberry coffee recipe is made of. Sounds simple? Sounds yummy? Then gather up your ingredients and let the baking begin!
Harvest Apple Cranberry Coffee Cake
Ingredients
Bottom Layer
- 2 Cups Apple chopped
- 2 Cups Cranberries fresh, frozen, or dried (unsweetened)
- 1 Cup Walnuts chopped (or your favorite nuts)
- ⅓ Cup Sucanat
Wet Ingredients
- ¾ Cup Butter softened
- ¼ Cup Applesauce
- ⅔ Cup Sucanat
- 3 Eggs
- 1 Teaspoon Vanilla Extract
Dry Ingredients
- 1 ⅓ Cups Pastry Flour or gluten-free
- 1 Teaspoon Baking Powder
- ½ Teaspoon Salt
Instructions
- Preheat oven to 350°F or 180°C.
- Mix together Bottom Layer ingredients together in a 9” x 13” baking pan.
- Cream together butter, applesauce, and sucanat. Add in the vanilla and eggs.
- Combine your dry ingredients in a separate bowl then add this to your creamed mixture. Be sure to mix well.
- Drop the mixture by large spoonfuls over the Bottom Layer mixture.
- Bake for 35 minutes or until your knife comes out clean.
