How to Make the Perfect Zucchini Bread or Muffins
Ingredients
- 3 cups whole wheat soft flour substitute: spelt, kamut or mix with barley and millet
- 3 cups (720 ml) finely chopped zucchini
- 2 teaspoon cinnamon
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 3/4 cup (470 ml) sucanat
- 3 eggs beaten
- 1/2 cup (120 ml) oil or pumpkin puree, applesauce
- 1 teaspoon vanilla
- 1 teaspoon salt
Instructions
- Preheat your oven at 350°F (180°C).
- In a bowl, combine all liquid ingredients - oil, eggs, vanilla, and sucanat.
- In another bowl, combine the dry ingredients - flour, baking powder, baking soda, salt, and cinnamon.
- Combine the dry ingredients with the liquid ones and mix well. Add in the zucchini.
- Pour the mixture into a baking dish. Top with chopped nuts, cinnamon, and sucanat.
- If you are baking bread, bake for an hour. But if you are baking muffins, bake for about 15 minutes.
This recipe can make 2 loaves of bread, 48 mini zucchini muffins or 12 regular-sized muffins.
