Barley is packed with vitamins and minerals. It is a rich source of fiber, selenium, and manganese. Additionally, it contains a notable amount of vitamin B1, magnesium, phosphorus, chromium, and copper.

Because of the high fiber content in barley, this helps lessen hunger. The beta-glucan in barley is a soluble fiber that promotes satiety and a feeling of fullness. 

Beta-glucan also forms a gel-like material in the gut. This promotes the absorption of nutrients and a healthy digestive system. 

Another benefit of beta-glucan is its ability to reduce the bad cholesterol in your body. This type of cholesterol binds to bile acids, which are then eliminated through the feces.

Lignans are also widely available in barley. This is a group of antioxidants that helps to lower your risk of heart disease and cancer. 

The Secret to Delicious Barley Cakes 

This cake is flexible and other optional ingredients would be tasty such as added cinnamon, raisins, or mini chocolate chips.

Freshly milling the flour makes these taste very fresh and better than any bread from the grocery store. Having your own mill such as the Nutrimill or the Mock Mill makes cooking less expensive and full of nutrition.

Barley grains can be purchased at specialty stores and even pearled barley can be milled in the Mock mill for this recipe.

Equipment

  • Mock Mill or Nutrimill

Ingredients
  

Dry Ingredients

  • 1 1/2 Cups Barley Flour freshly milled
  • 1/2 Cup Whole Wheat Flour hard white or spelt - freshly milled
  • 1 Teaspoon Baking Powder aluminum free
  • 1/2 Teaspoon Real salt

Wet Ingredients

  • 1 Cup Milk your favorite variety
  • 1 Egg from a local farmer, if possible!
  • 1 Cup Honey amount can be reduced

Instructions
 

  • Preheat oven to 425 degrees F.
  • Mix together dry ingredients.
  • Mix together wet ingredients.
  • Combine and mix together both dry and wet ingredients.
  • Oil a muffin tin or use muffin liners.
  • Drop by spoonful into prepared muffin tin.
  • Bake for 10-15 minutes. Cakes will be light brown when done.

Notes

Substitute cane sugar for the honey for a more dense batter. You can then use a baking tray and spoon the batter like pancakes.
