Remember the old adage “An apple a day keeps the doctor away”?

It’s true in every sense because apples are packed with nutrients that they keep you healthy and thriving.

This nutrient-dense fruit is rich in fiber - pectin, soluble, and insoluble. In fact, the fiber you can get from apples is higher than several other fruits on the planet. This is an important nutrient that regulates your blood sugar level, keeps your digestive system healthy, facilitates toxin removal, cleanses the liver, and promotes weight loss.

First of all, this apple cake recipe is gluten free.

If you have gluten intolerance, then this recipe is perfect for you. 

I use the Bob’s Red Mill Baking Flour, which is gluten-free, although you can also make your own gluten free flour such as oat flour. I have a tutorial on how to make that flour fast and easy, and I recommend that you check it out!

Honestly, I prefer to mill my own flour because it keeps my recipes fresh. Milling it yourself is also a cheaper alternative to store-bought flour.

I suggest that you mill a small batch, which you intend to use in your recipe. After all, with a portable flour mill in your kitchen, you can have a good amount of freshly-milled flour in seconds!

Ingredients
  

  • 2 cups (470 ml) whole wheat flour soft pastry
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 cup (240 ml) walnuts chopped
  • 2 eggs beaten
  • 4 cups apples finely chopped, peeled
  • 1 cup (240 ml) sucanat with honey
  • 1/2 cup (120 ml) olive or canola oil
  • 2 teaspoons vanilla extract
  • 2 scoops protein powder (optional)

Instructions
 

  • Preheat your oven to 325°F or 163°).
  • In a bowl, mix the dry ingredients except the walnuts (flour, baking soda, salt, and cinnamon). Set aside.
  • In a separate bowl, blend together the walnuts, oil, vanilla, eggs, and sucanat.
  • Fold the liquid ingredients into the blended up dry ingredients.
  • Add in the apples and mix well.
  • Pour the mixture into your greased Bundt pan. Bake your apple cake for 50 to 60 minutes. Once the knife comes out clean, your cake is ready!
  • Cool for about 10 minutes before taking the pan out of the oven.
  • Serve and enjoy!
